Jenni, I usually use boneless, skinless breasts because it’s so much easier to do without bones and skin to contend with. And there’s almost no waste. It might be cheaper in the long run to buy it bone and skin on, even with the weight of the bones and skin that are tossed, but it sure is a lot more trouble. You might try looking for boneless thighs. Could be a happy medium. Cheaper than breasts and easier to bulk cook.

Good point Kim, I will have to look for the boneless skinless thighs next time. I like the combo of the white/dark meat.

Me, too. My hubby is a white meat eater, so I have gotten used to white meat over the years. But dark meat is so much more flavorful. :)
