Steamed Veggies

Steamed veggies are always good as a side dish. Ie. carrots, asparagus, broccoli, beans, cauliflower etc. I make them up and put them on the plate then put a heap of butter on to melt, and salt and pepper. I like to dip in balsamic vinegar. That is what I usually do or a salad. I will have to look up some good ones though.

I have a steamer and I just put them in the top part with a little water in the bottom and set temp to med/high and they are done in about 5-8 minutes depending on how done you like your veggies.

4 Tbls Olive oil
1 medium onion finely chopped
2 garlic cloves, finely chopped
2 cups chopped and peeled Tomatoes
1/4 tsp. dried oregano
1 – 1/2 cups shredded cooked chicken
4 oz cheddar cheese, grated
1 cup unflavored yogurt
12 corn tortillas

In a heavy skillet heat 1 Tbs. of the oil over

Crayon Cookies – from “Best Loved Cookies”

Color Crayon Cookies
These cookies were a really fun project to do with the kids. They were pretty young when we made them so they mostly watched, but they loved eating them to be sure! I love making cookies that the kids are impressed with, they love my Chocolate Chip Cookies but any kind of sugar cookie that is decorated with something fancy, that just really hits home for them!

Crayon Cookies

Ingredients:

1 cup butter, softened
2 teasoons vanilla
1/2 cup powdered sugar
2 1/4 cups all-purpose flour
1/4 teaspoon salt
Assorted paste food colorings
1 1/2 cups chocolate chips
1 1/2 teaspoons shortening

Preparation:

  1. Preheat oven to 350 degrees F. Grease cookie sheets. Beat butter and vanilla in large bowl at high speed until fluffy. Add sugar; beat at medium speed until blended. Combine flour and salt in small bowl. Gradually add to butter mixture.
  2. Divide dough into 10 equal sections. Reserve 1 section; cover and refrigerate remaining 9 sections. Combine reserved section and desired food coloring in small bowl; blend well.
  3. Cut dough into 2 equal parts. Roll each section into 5-inch log. Pinch one end to resemble crayon tip. Place cookies 2 inches apart on prepared cookie sheets. Repeat with remaining 9 sections of dough and desired food colorings.
  4. Back 15 to 18 minutes or until edges are lightly browned. Cool completely on cookie sheets.
  5. Combine chocolate chips and shortening in small microwavable bowl. Microwave at HIGH 1 to 1 1/2 minutes or until smooth. Decorate with chocolate mixture as shown in photo-or how ever you like ;)

I’m open to suggestions on other sugar cookie recipes, still working on finding the recipe that really suites my taste!

Rhubarb Muffins – Aunt Bev

I will have to try these out, thanks for aunt Bev’s recipe Mom. We will have to get aunt Lottie’s scone recipe in here, those were soooo good!

Rhubarb Muffins..(Aunt Bev)
They are soo good.

1 1/4 cups of brown sugar
1/2 cup oil
1 egg
2tsp. vanilla .

Mix and add
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp. salt

Mix together and add
1 cup buttermilk
add 1 1/2 cups of diced rhubarb
and 1/2 cup of nuts.

Topping Mix 1 Tablespoon of melted butter
with 1/3 cup sugar & 1 tsp cinnamon scatter over muffins.
Bake at 400 for 20 to 25 minutes ENJOY

Beef Cassarole-Nicole

I made this a couple nights ago. It turned out really good. Although I made mashed potatoes with 3 large potatoes and I would have used at least 4, and I used one can of beans and I would use 2 next time, to make the cassarole last longer.

Beef Casserole

First Layer
1 lb ground beef cooked with onion
add 1 can cream of mushroom soup
Second Layer
Green beens, olives (or veggie of choice)
Third Layer
Mashed potatoes (with a hint of garlic)
Fourth Layer
Cheese (and lots of it if you’re cooking for my hubby!)

It’s nothing fancy but it’s a nice beef cassarole dish (instead of chicken for a change). And it tastes good (espesially if you add olives).

Peanut Butter Fudge – Jenni

This recipe just sounded really good to me. I don’t even remember where I found it but I do need to give it a try sometime!

Peanut Butter Fudge

4 cups sugar
1 can (12oz) evaporated milk
1 cup butter or margarine
1 jar (7oz) marshmallow cream
3 pkgs (6oz) semisweet chocolate chips, 18 ounces total, or about 3 cups
1 tablespoon vanilla
1 cup peanut butter

PREPARATION:
Combine sugar, milk and butter in a heavy saucepan; bring to a boil and cook for 8 minutes, stirring constantly. Add marshmallow cream, chocolate chips and vanilla; stir to blend. Pour half of mixture into a buttered 13- x 9- x 2-inch pan; dollop with spoonfuls of peanut butter.

Spoon remaining chocolate mixture over the peanut butter. Gently swirl the mixture with a knife to create a marble effect. Chill until firm; cut into 1-inch pieces and store in an airtight container in the refrigerator.
Makes about 5 pounds.

Turkey Burgers

This is a simple and delicious recipe. These are really good – any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves. Prep Time: approx. 15 Minutes. CookTime: approx. 15 Minutes. Ready in: approx. 30 Minutes.
Makes 12 burgers (12 servings).

3 pounds ground turkey1/4 cup seasoned bread crumbs1/4 cup finely diced onion2 egg whites, lightly beaten 1/4 cup chopped fresh parsley1 clove garlic, peeled and minced1 teaspoon salt1/4 teaspoon ground black pepper

Directions
1. In a large bowl, mix ground turkey, seasoned bread
crumbs, onion, egg whites, parsley, garlic, salt, and pepper.
Form into 12 patties.

2. Cook the patties in a medium skillet over medium heat,
turning once, to an internal temperature of 180 degrees F (85
degrees C).

1 32 oz. bag of frozen southern style hashbrown potatoes
1 lb of bacon cut into pieces, fried and drained.
1/2 cup diced onions
1 green pepper diced
3/4 lb. cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 tsp dry mustard
salt & pepper

Layer the frozen potatoes, bacon, onions, green pepper and cheese in
the crockpot in two or three layers. Finish up with cheese. Beat the
eggs, milk and mustard, salt & pepper together. Pour over the whole mixture.
Cook on low for ten to twelve hours.
