2 C whole wheat pastry flour2 T sugar, any kind (opt)1 t soda1/2 t salt2 T oil3 eggs1 3/4 c buttermilk(Mix all ingredients and cook 1/4 C at a time on a warm cast iron skillet.)

Have you tried oatmeal pancakes? We love them at our house, (the recipe off the back of the Bob’s Red Mill bag of Scottish oats). We use whole wheat flour and they are soooooo yummy. Served with applesauce, or a berry sauce, honey or syrup, etc. Also I make German Pancakes with whole wheat, and my husband loves them. (I used to add the sauce to whole wheat pasta so he wouldn’t notice the noodles were brown!)

Thanks Roberta, oatmeal pancakes sound wonderful! Those oats you mentioned, you can buy anywhere? I will have to look for them. Thanks for the tip!

You know, Bob’s Red Mill was local to where I used to live in Oregon, I am not really sure if that particular brand is available anywhere. (And then I started questioning whether I had gotten the recipe off the bag or from a sticker at their store!) I will look for my recipe and TRY to get it to you. (emphasis on TRY as we are still unpacking :)) There was a really good one in the Oregonian a few years back where you use buttermilk and put all the ingredients in the fridge overnight. But I would imagine Scottish oats (like steel cut oats) are available elsewhere, you could try the bulk section.
