Frozen Fruit Salad

Ingredients:

1/2 cup white sugar
2 cups water
1 (6 ounce) can frozen orange juice concentrate, thawed
1 (6 ounce) can frozen lemonade concentrate, thawed
4 bananas, sliced
1 (20 ounce) can crushed pineapple with juice
1 (10 ounce) package frozen strawberries, thawed

Directions:

Dissolve sugar in the water. Add orange juice, lemonade, bananas, crushed pineapple with juice, strawberries and mix well. Pour into 9×13 inch glass pan. Freeze until solid. When ready to serve, let it sit out for about 5 minutes (may want to allow more time to thaw) before attempting to cut.

Fabulous Fruit Salad

2 cups diced apples
1 cup sliced banana
1 cup sliced fresh strawberries
1 cup chopped walnuts
1 cup vanilla yogurt
3/4 teaspoon ground cinnamon

DIRECTIONS:

1. In a bowl, mix the apples, banana, strawberries, and walnuts. Fold in the yogurt. Sprinkle with cinnamon. Gently stir just before serving.

Hot Apple Cider

1/2 gal. apple cider
1/2 c. brown sugar
1 tsp. whole allspice
1 1/2 tsp. whole cloves
2 sticks cinnamon

Heat slowly until sugar is dissolved. Simmer for at least 1 hour. Add 2 cups orange juice 1/2 hour before simmering is completed. Serve with an orange slice in each cup or can use lemon slices. (Serve hot.) This recipe may be doubled for a larger crowd.

Chops In A Crock

6 pork chops, browned (you can skip the browning)
1 onion, chopped
3 T. catsup
10.5 oz can cream of mushroom soup
2 t Worcestershire sauce

Place into crockpot and simmer about 4-5 hours. Serve with rice, noodles or potatoes.

Mexican Pork and Bean Soup

Mexican Pork and Bean Soup

Prep. time: 10 minutes Cooking time: 25-30 minutes

Ingredients

1/2 pound lean ground pork
1 small onion, diced
1 garlic clove, minced
1 (14 1/2 oz. ) can chicken broth
1 fifteen-ounce can chopped tomatoes, Mexican style
1 fifteen-ounce can canned pinto beans, drained
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Directions

In large heavy saucepan brown and crumble ground pork. Stir in onion and garlic; cook and stir until onion is soft, about 3 minutes. Stir in all remaining ingredients, bring to a boil, lower heat and simmer about 10 minutes. Makes 6 1-cup servings.

Potato Soup

Potato Soup

Bacon about 2 slices/person (or sausage to taste),
diced
1/2 onion, diced
1-2 cloves garlic, diced
2 Tablespoons flour
2 red (or gold) potatoes/person (less if you use
large potatoes), diced
Chicken broth
Green Chili to taste

Cook bacon in bottom of large pot. Add onion and
garlic and saute until translucent. Add flour and
stir
for 1 minute. Add potatoes and chicken broth to
cover.
Bring to a boil and reduce heat to a simmer cook
about
20 minutes until potatoes are soft. With a potato
masher, mash slightly, you still want chunks of
potato. Add chili and serve.

Fresh Apple Cake – Brenda

I haven’t tried this one yet but it sounded so good and really simple so I thought I would post it!

Fresh Apple Cake

2 cups apples, diced (you can leave the skin on)
3/4 C oil (olive works great)
1 1/2 C sugar (your choice)
1 C nuts (your choice or omit if needed)
2 eggs, slightly beaten
1 t vanilla
2 C flour (your choice-I use wheat/white mixture)
1 t baking soda
1 t cinnamon
3/4 t salt

Mix apple, sugar and oil. Let stand 10 minutes. Add the remaining
ingredients and mix well. Bake in greased 9×13 pan at 350 for 35
minutes. Sprinke with xxx sugar if desired.
