Whole Grain Recipes

For some great Whole Grain Food recipes go to Bob’s Red Mill. I can’t wait to try out some of their recipes and post the ones I really like! Enjoy!

Basic Whole Grain Muffins-Jana

I made these the other day and they were wonderful! So wonderful that I they were gone in a very short period of time and I think next time I am going to have to do a double batch but first I need to buy another muffin pan! This recipe made 12 muffins. I subbed the raisins for peaches (I used canned peaches from Costco but obviously fresh would have been even better and I mashed them and dumped them right in!) Yummy! Next time I’m going to try it with some oat bran in place of some of the flour. I can never seem to just stick to a recipe! ~ Jenni

Basic Whole Grain Muffins

2 c whole wheat flour
1 t. baking soda
1/4c brown sugar or honey
1 t ground cinnamon(optional)
1/8 t ground cloves(optional)
1/2 t salt
1/2 c raisins
1 egg, beaten
1C. buttermilk(pour 1 T white vinegar into a 1 c measuring cup and fill the rest with milk)
3 T oil

Mix dry ingredients and raisins in bowl. Make well in center. Add egg, buttermilk and oil. Stir until moistened. Fill greased muffin cups 1/2 full. Bake at 375 for 12-15 minutes. Good hot or cold. May substitute yogurt for buttermilk or melted butter for oil. Also, may add nuts, or sunflower seeds or omit raisins and add 1 c blueberries or chopped fruit.

You can also omit baking soda and buttermilk and add 2 t baking powder and 1 c. milk

Apple Cinnamon Syrup

Going to try this sryup, we are a real pancake family and I love fruit on my pancakes, somehow even if it’s sugary it seems healthier! Will let you know how this one turns out!

Apple Cinnamon Syrup

1/2 cup packed brown sugar
1/3 cup water
2 tablespoons butter
1 teaspoon cornstarch
1/2 teaspoon cinnamon
3 medium apples, peeled and sliced

Bring brown sugar, water, butter, cornstarch and cinnamon to a boil; boil until thick, about 2 minutes. Stir in apples; cook until tender, 10 to 12 minutes.
