PB & Chocolate chip breakfast muffins

Heidis PB & Chocolate chip breakfast muffins

4 Tbs butter, softened
2 eggs
� cup vanilla yogurt
1/3-cup sugar
� cup peanut butter
� tsp vanilla extract
1 cup all purpose flour
2/3-cup whole-wheat flour
1 Tbs baking powder
Pinch of salt
� cup mini chocolate chips

1. ? ? ? Preheat the oven to 375 degrees. Spray or use
liners for 12 muffin cups. Set aside.
2. ? ? ? In a large bowl, use an electric mixer to beat the
butter, eggs, yogurt, sugar, peanut butter and vanilla
extract. Add flours, baking powder, and salt and blend
until well mixed (If you over mix the batter, the
muffins won�t be fluffy.) Fold in chocolate chips.
3. ? ? ? Spoon about � cup batter into each muffin cup and
bake on the middle shelf of the oven for 20 minutes,
of until muffins are light brown and a toothpick
inserted in the center of one muffin comes out clean.
