Whole Wheat Carrot Cake

My mother made this recipe and for all the healthy stuff in this cake, it was delicious!  This cake is very moist, and the neat thing about this recipe is that you can really adjust it to your own preferences. I will definitely be making this cake, one day!

Honey Wheat Carrot Cake

Ingredients:

2 C Whole Wheat Flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/4 C wheat germ
1 C salad (or olive) oil
1-1/2 C honey
4 eggs
4 C grated carrots
1/2 C chopped walnuts (optional)
1/2 C raisins

Honey Cream Cheese Frosting

8 oz cream cheese, softened
1/2 C butter or margarine
2-1/2 Tbsp vanilla
4 to 6 Tbsp honey
2/3 C dry milk powder

Preparation:

  1. In large mixing bowl, combine dry ingredients. Add oil, honey and eggs.
  2. Beat until well mixed. Stir in carrots and nuts and/or raisins. Pour into greased 9″X13″ pan.
  3. Bake at 325 F for 40 to 45 min., or until cake tests done. Cool completely. Serve plain or frost with Honey Cream Cheese Frosting.

Frosting: Combine all ingredients and beat to spreading consistency, adding dry milk powder as needed.

Tip:

Measure the oil first and use the same cup for the honey. Honey willslide easily.
