Taco Salad

Last night we had taco salad for dinner, it was wonderfully refreshing! I had been thinking about this delicious salad for several days and finally managed to get the ingredients together to make it. We were really pleased with how it turned out, I think taco salad is a great way to get kids used to eating salads.

Simple Taco Salad

Ingredients:

1 1/2 lbs ground beef
1 can black beans, drained
2-4 Tbsp Taco seasoning (or one packet) depending on how spicy you like it
2-3 heads romaine lettuce
10-15 sprigs chopped fresh cilantro
2 cups shredded cheddar cheese
Tortilla chips
1/2 chopped sweet bell pepper
1/4 chopped red onion
Ranch salad dressing
1 Large tomato

Preparation:

1. Brown meat in skillet, add beans and taco seasoning, set aside.

2. While meat is browning you can work on chopping up your veggies.

3. When everything is ready to put together; rather than throwing everything in one bowl, we make separate bowls and everyone can add what they like. The nice thing about this is that if there are left overs they can be saved for the next day without causing the lettuce to wilt.

4. I put the meat mixture on the bottom, then the chips (broken into small pieces), then I add a small handful of cheese, the lettuce/cilantro, then the peppers, onions and dressing. Then toss the salad and top with freshly sliced tomatoes. This is how I put it together, but you can do it  however you want, that’s the joy of a salad!

    Jenni,dinner looks great! I want you to get on Randy’s cousins blog. She is the best grocery shopper. She purchases $700 and only puts out $35.00. She is coming to town in July I told her we have got to get the news out to our sisters and she said she will show me how she does it and I will for sure show you!!
