Raspberry Scones

I think I’ve mentioned before that scones are one of my weaknesses in life? Well, they are! I was pleased with this recipe, and although the picture doesn’t show, the first time I added currents and I liked them much better. They turned out just moist enough :) I got lots of compliments on this recipe, thanks cdkitchen!

Raspberry Scones

Ingredients:

1 cup fresh or frozen raspberries
1 3/4 cup all-purpose flour
3 teaspoons baking powder
1/4 cup granulated sugar
1/2 teaspoon salt
1/3 cup butter-flavor shortening
2 large eggs
1/3 cup milk or half-and-half
Cinnamon-sugar mixture

Preparation:

  1. In a large bowl, sift together flour, baking powder, sugar and salt. Cut in shortening with a pastry blender until mixture resembles coarse crumbs. Gently stir in raspberries, taking care to keep them as whole as possible.
  2. Whisk eggs with milk or half-and-half. Lightly stir into the flour mixture.
  3. Turn dough out onto a floured board, handling as little as possible. Shape the dough into two (6-inch diameter x 3/4-inch thick) rounds. Score each circle into wedges with a sharp knife. Brush with a bit of milk, then sprinkle with sugar-cinnamon. Bake for 15 to 20 minutes or until lightly browned. Test with a wooden pick after 15 minutes of baking.

Here is my own variation: I added about half the berries, mashed them up and removed the extra juice. Then added about 1/2 cup of currants. This made the raspberry flavor not quite as overpowering and the currants added a nice texture. After the scones cooled I added a maple glaze and they turned out so yummy!

Maple Glaze:

1 1/4 cup confectioners’ sugar, sifted
1 teaspoon pure vanilla extract
1/3 cup pure maple syrup

To make maple glaze: In a bowl, combine confectioners sugar and vanilla. Gradually whisk in enough maple syrup to make a coating consistency. Spread the glaze over the scones, let them set to harden or eat right away!  This recipe was enough for a double batch of scones.

And with all that, I must add a picture of my little helper. She LOVES helping me cook. Guenna wants to do everything and that makes it a little difficult at times since she is only two. But one day, she will be able do everything in the kitchen. I look forward to that day!
