Contrary to what previous studies have shown, coconut oil is actually very good for you! I often start my day with a tablespoon of coconut oil, no I don’t just eat it by itself! I melt it and put it in a smoothie or put it in my oatmeal sometimes, but my favorite way to get my coconut oil is cooked with eggs and vegetables. There are so many health benefits of coconut oil; weight loss, lowering chances of heart disease, it aides in digestion, contains anti-fungal properties, to name just a few. Healthy Egg and Vegetable Breakfast

Ingredients:

1 Tbsp coconut oil
Handful of chopped peppers and onions
Two eggs, scrambled
Salt and pepper to taste

Preparation:

Melt coconut oil over medium heat in a small pan, add peppers and onions and saute until tender.  Crack eggs into a bowl and mix, add to the vegetable mixture and cook on medium until the eggs are cooked through. Add salt and pepper to taste. And don’t forget to take your cod liver oil, the two together are a power house of health for your body!

  1. I just recently learned that coconut oil is healthy for you. I had been avoiding it for years, because of the bad rap it had. I’m planning to start using it again :)
