Almond Flour Banana Pancakes – Paleo

Almond Flour Banana Pancakes - Paleo
Okay, first of all I have to say, aren’t these just the cutest ever?! Look at those two tiny fried quail eggs on top of my small little stack of pancakes :) Quail eggs are so fun!

This week I’ve been experimenting with a pancake recipe that works for us, and I think I’ve finally got it right! :) The first time I made these I made them with frozen blueberries (that were really big), and the kids didn’t really like the blueberries in the pancakes. I know, what’s wrong with them?! But they love the frozen blueberries on the side, or simmered down into syrup, so I guess I can’t complain! Anyway, I wouldn’t use the frozen blueberries from Costco in this recipe, they are just too big, and make it really hard to flip, use fresh berries or smaller frozen ones. Continue reading

Basil-Lime Baked Salmon

Lime Basil Baked Salmon

We try to eat fresh fish once a week, or at least some kind of seafood. As much as I love; olive oil, lemon, dill and salt and pepper, I’m always trying to think of other ways to bake my fish! This marinade has a really nice zippy, fresh flavor, no tartar sauce needed!! I think it’s one of my favorites so far! Continue reading

Blue, Brown, and Dark Brown Eggs

Farm Fresh Eggs
All of our chickens have finally started laying this year! Last spring I hatched a few different pure breeds of chickens. Black and Blue Copper Marans, Blue Ameraucanas, and Blue Laced Red Wyandottes, and I’m happy to say that they’ve all finally started laying eggs as of this week! The pretty blue ones are laid by the Ameraucanas, the dark browns are laid by the Blue and Black Copper Marans, and the light browns are laid by several different breeds that we have on our little farm. Lime Balsamic Vinaigrette Dressing

Lime Balsamic Vinaigrette Dressing

I know this isn’t the most amazing picture I’ve ever taken, but the recipe is healthy and it’s amazing homemade dressing! So simply easy to make, and so much cheaper than buying dressing! We go through dressing pretty fast around here, and this one even the kids love! Continue reading

How do I get my kids to eat healthy foods? Tips from mommy…

Chicken Spaghetti Squash

One of the greatest struggles of motherhood, and fatherhood for that matter, can be getting your kids to eat something other than pasta, cheerios, and cookies :) I say it with a smile but any parent who’s been a parent for very long probably knows that sometimes there aren’t very many smiles at the dinner table when mommy decides to make something a little more healthy than normal. Like fixing green beans for a side dish.

So from our table to yours, here are just a few things I’ve found to work (in some cases) around our toddler, and not so toddler table. Continue reading

Paleo, Pregnancy, and Heartburn

I was just realizing the other day that normally by this time in my pregnancy (I’m 23 weeks pregnant), I usually start to have heartburn. I normally turn in that good old 1st trimester “morning sickness” that lasts all day, for gradually increasing heartburn. The heartburn like I said is gradual, I will get heartburn in the evenings, and then the closer I get to D-Day, the more of the day this heartburn takes up. Here I am today, at 23 weeks pregnant. I don’t really look very “pregnant” in this picture, I think I carry my babies all spread out because in some clothes I don’t look pregnant until later. To me I just look a little overweight, but oh well, it’s how God made my body :)

23 weeks pregnant, Baby #7 Continue reading

Hot Butternut Squash “Cereal” without the Oats

Hot Breakfast Butternut Squash (Paleo)

Sometimes I get a hankering for something different, eating Paleo you can’t do hot cereal because of the grains. This is a recipe that kind of fills that need for something hot, other than eggs and bacon :) But is still really healthy and so tasty! Hope you enjoy! Continue reading

Slow Cooker Italian(ish) Meatballs – Grain Free

Slow Cooker Italian Meatballs

I Love meatballs, and I love my slow cooker so these were a win-win! I’ve never been a huge fan of cooked spinach so if you aren’t either I would maybe sub out the spinach for cabbage or some other vegetable that holds up well in the slow cooker. My kids weren’t too fond of the spinach either, but I think the cabbage will be a little more appealing to their little eyes ;) The taste of the meatball was great though and went nicely with the cabbage slaw I made for a side dish! Hope you enjoy! Continue reading

Fried Quail Eggs

Fried Quail Eggs

Aren’t they just the cutest little fried eggs?! We have a few quail that are good little layers, their eggs are pretty small. It takes about 3 eggs to make up the size of a chicken egg. I’ll save up my quail eggs for a few days and give the kids a quail egg feast for breakfast, they each eat about 5 fried quail eggs(30 eggs) if I have that many :)

Quail eggs fry up pretty much the same as chicken eggs, but their shells are very different. The membrane beneath the shell is really tough so you can’t crack the eggs like you can a chicken egg, you either puncture with a sharp scissor and cut a slit to open or use a very sharp knife and hack the end off. This is my preferred method but it takes a little practice. We love our little quail they are sweet little birds and provide a supplemental food source to our family! It’s especially nice in the winter when my chicken’s aren’t laying as well. Thanks girls!

I think my quail are thankful for the heat light

Green Smoothie

Green Smoothie

There is really no better way to start off your day (in my humble opinion) than with a filling green smoothie. They are so easy to make and chalk full of nutrients to get your day going in the right direction. Sometimes I’m in the mood for eggs and bacon with the kids and that’s another great way to start the day, and those days I push the smoothie back until lunch. Either way, it’s a great way to get a big portion of greens and antioxidants into your daily diet. Continue reading
