Fried Quail Eggs

Aren’t they just the cutest little fried eggs?! We have a few quail that are good little layers, their eggs are pretty small. It takes about 3 eggs to make up the size of a chicken egg. I’ll save up my quail eggs for a few days and give the kids a quail egg feast for breakfast, they each eat about 5 fried quail eggs(30 eggs) if I have that many :)

Quail eggs fry up pretty much the same as chicken eggs, but their shells are very different. The membrane beneath the shell is really tough so you can’t crack the eggs like you can a chicken egg, you either puncture with a sharp scissor and cut a slit to open or use a very sharp knife and hack the end off. This is my preferred method but it takes a little practice. We love our little quail they are sweet little birds and provide a supplemental food source to our family! It’s especially nice in the winter when my chicken’s aren’t laying as well. Thanks girls!

Green Smoothie

Green Smoothie

There is really no better way to start off your day (in my humble opinion) than with a filling green smoothie. They are so easy to make and chalk full of nutrients to get your day going in the right direction. Sometimes I’m in the mood for eggs and bacon with the kids and that’s another great way to start the day, and those days I push the smoothie back until lunch. Either way, it’s a great way to get a big portion of greens and antioxidants into your daily diet.

Green Smoothie

Makes 1 serving, 3 cups (I usually end up sharing a little with my kids so that’s why I make it so big, if you don’t have kids to share with you might cut back on the berries and coconut milk a little :)

Ingredients:
1/2 banana
1/2 cup coconut milk (full fat)
3 cups fresh spinach
1 1/2 cups frozen berries, I use a mixture of strawberries, blueberries and blackberries
1 Tbsp Extra Virgin Coconut Oil, melted
1 scoop Whey Protein powder (or serving size on your protein powder of choice)

Here’s how I start mine out:

1. Banana, coconut milk, and spinach and whir together until spinach is pureed.

2. Then I add the frozen strawberries and blueberries and whir again, it helps if you start out at a low speed then slowly speed up.

3. When adding the melted coconut oil I get the mixture going and then add the oil while the machine is going. If you dump it into the blender while it’s stopped it will most likely harden and you will get coconut oil chunks in your smoothie which will probably get stuck in your straw :)

4. Add the rest of the ingredients and blend until smooth. Drink while it’s cold!

Grain-Free, Egg Pancakes

I don’t think I’ve ever been quite as excited about a new recipe as I am about this one. I am smiling inside and I can’t wait to share this one with my friends. I don’t know about you but I’ve started our family out with lots of things I’m trying to “un-do” like, lots of bread, toast, sugar, processed Mac ‘n’ Cheese, and the list goes on. And guess what, my kids like all those things. The hardest part about this journey of becoming more healthy has been finding recipes that my kids get excited about, and that is why I LOVE this recipe!

Grain Free Egg Pancakes

Every time I have made pancakes, my kids love them, they are homemade and tasty, full of butter and pure maple syrup, but eventually these ingredients will catch up with my kids. I really desire to help my kids form good habits, healthy habits. So that it’s not so hard to eat healthy when they are adults living on their own. I’m not talking about completely removing all forms of grain, carbs, sweets, and processed foods from their diet. But I want them to be the exception and not daily consumption. Continue reading

Breakfast Cookies

Breakfast Cookies
A few weeks ago I rummaged around online looking for a Breakfast Cookie recipe. I usually add a link to where I found the original recipe that I end up tweaking but the one I found was hard to understand so I’m not going to leave a link :)

The past few months I’ve been trying out (here and there) a diabetic diet. Trying my best to not gain too much weight during this pregnancy. In an effort to be more successful at this diet I wanted to have a few healthy quick snacks that I can grab between diaper changes and preparing meals for my ever-growing children! I’ve heard many doctors and other smart people say that it’s best to eat 5-6 small meals a day instead of 3 larger ones. But that can be a challenge for a mom with six kids (one still inutero!)

I chose this recipe because it didn’t call for sugar, just a bit of dark chocolate, and what I’ve read (from some more of those smart people) is that a bit of good organic dark chocolate, low in sugar, is great for our bodies! So, by all means, throw in a handful of chocolate and enjoy it! God made the cocoa fruit and we should enjoy it from time to time!

So I’ve decided, while I will dabble in this diabetic diet here and there (I’m not a diabetic by the way but my midwife thought it was a good healthy way to eat while expecting), I’m also going to strive to live a balanced life and not worry too much about how fast I lose the “baby weight.” And if my kids want me to make them a chocolate cake for their birthday, then you bet, let’s have some cake!! :) Okay, back to this healthy breakfast cookie recipe. I thought they turned out pretty good for how healthy they are, and a filling snack for a mom on the go, I hope you enjoy tweaking this recipe to your liking as well! Add some currants, or pumpkin or sunflower seeds, or cranberries. Have fun with it!

There’s nothing like sitting down to a warm piece of homemade bread on a cold, rainy spring day in Washington (these kind of days happen often in Washington, in April or any other time of the year for that matter!) Sometimes one needs a little pick-me-up when the sun isn’t shining. And when it’s a healthy pick-me-up, well, all the better!

I’m always looking for a good use for those three quickly browning bananas on the top of the fridge. I found this recipe and adapted it be even a little more healthy, according to my standards anyway, someone else might disagree! :) I don’t know if I have ever just left a recipe as is, I am constantly making adaptations based on what I have on hand, sometimes they work, sometimes they don’t! I was happy when this one turned out great!

Healthy Egg and Vegetable Breakfast

Healthy Breakfast

Contrary to what previous studies have shown, coconut oil is actually very good for you! I often start my day with a tablespoon of coconut oil, no I don’t just eat it by itself! I melt it and put it in a smoothie or put it in my oatmeal sometimes, but my favorite way to get my coconut oil is cooked with eggs and vegetables. There are so many health benefits of coconut oil; weight loss, lowering chances of heart disease, it aides in digestion, contains anti-fungal properties, to name just a few. Oat Waffles

I really wanted to title this post, “Real Men Cook with their Wives!” But I thought “Oat Waffles” might be more accurate for search engine purposes ;)

I must say, cooking is not my husband’s forte, but I love how he is always willing to help me out when I need it. He made this batter all by himself. I will admit, I consider it very romantic to wash dishes while my husband is cooking next to me, what wife wouldn’t appreciate an extra hand in the kitchen (especially one that is capable of stirring batter without making a huge mess! ;)

I will have to add the picture of our waffles, the only waffle iron we possess is a cute Mickey Mouse waffle iron. It is really cute but not the most practical waffle iron because you can only make one small waffle at a time, and each of the kids want 2 or 3, by the time this pregnant woman has had one, I’ve been standing for quite some time! We manage though and the kids LOVE eating Mickey Mouse waffles. Without further ado, here’s the recipe.

Raspberry Scones

I think I’ve mentioned before that scones are one of my weaknesses in life? Well, they are! I was pleased with this recipe, and although the picture doesn’t show, the first time I added currents and I liked them much better. Blackberry Cobbler

My kids are not huge fans of fruit desserts, pies and such. So I thought I would try this cobbler recipe from my “Best of Country Pies” recipe book that I got from my mom a few years ago. The kids loved this dessert! It was pretty cakey and less juicy/fruity :)  So if you are looking for a cobbler recipe that is chalk full of fruit this would not be the one you are looking for, although the cake part is so good, you can always double the fruit part and put a bunch on the bottom, it would be delicious either way!

Frozen Fruit Sorbet-Homemade

Homemade frozen fuit icecream

This ice cream or sorbet was perfect! The kids had a blast making it with our new juicer and it was so fast and easy. The best part about it is that it’s so healthy, you could eat it for breakfast lunch and dinner. Nothing added, just frozen fruit. Half the fruit I froze myself and the others, I bought at Costco. It really is a simple and quick dessert, the whole thing (without kids) could be made and cleaned up in about 15 minutes! All the kids loved it and they always love to help me in the kitchen so that was an added bonus!
