Aspiring Chef in the Making

Familiarizing (is that a word?) herself the ingredients in the frig :)

Just thought it would be fitting to share this adorable picture of our littlest aspiring chef, getting familiar with her ingredients! If I don’t want a similar situation to transpire, I have to get what I need quickly these days or I might have to fish the “goods” out of the frig before I shut the door. Isn’t she just adorable? :)

Baked Sweet Potato Fries

So, most of my kids prefer plain old “potato fries”. Actually, if you gave them the choice, I’m almost positive they would pass right by mama’s homemade fries for the enemy fries, greasy McDonald. Isn’t that just wrong? Anyway, today while the kids were watching me slave away chopping all of the sweet potatoes meticulously by hand, Eamon pointed out, “that must be hard!” Then someone asked, I think it was Guenna, “are you ever going to make REAL fries mommy?” Hmmm, I’ll have to think about that. Probably not ;) But you never know, I just might if you ask me really nice.

In the meantime, lets work up an appetite for these tasty little homemade, “not quite real fries”, shall we? Okay, we are all a work process, including me. Even though some of the kids are still getting used to the idea of sweet potatoes over regular potatoes, there weren’t really any of these tasty buggers left when dinner was cleared off the table, so not so bad after all! I’m still working on tweaking the recipe to tantalize their taste buds, I got the inspiration from my Everyday Paleo book, you should buy it if you’re a mom and you’re interested in the Paleo Diet! Mexican Wedding Cookies

Mexican Wedding Cookies

Last week Guenna and I made these delicious cookies for our Homeschool Co-op. We were supposed to bring an authentic Mexican snack food and I found this recipe online.  The only thing I really changed was that I didn’t add the anise seeds (thought the kids would appreciate the cookies better without that spice), and they called to make these in the food processor. I tried it in my high powered VitaMix, it did NOT work so I finished them by hand and they turned out just fine. So if you have a food processor then blend it all in there, otherwise follow my instructions and you will do great it’s just a little more work. By the way, if you are thinking these look an awful lot like Russian Tea Cakes, you are absolutely right! I think it’s the same recipe :) Hope you enjoy!

Raspberry Scones

I think I’ve mentioned before that scones are one of my weaknesses in life? Well, they are! I was pleased with this recipe, and although the picture doesn’t show, the first time I added currents and I liked them much better. They turned out just moist enough :) I got lots of compliments on this recipe, thanks cdkitchen!

Frozen Fruit Sorbet-Homemade

Homemade frozen fuit icecream

This ice cream or sorbet was perfect! The kids had a blast making it with our new juicer and it was so fast and easy. The best part about it is that it’s so healthy, you could eat it for breakfast lunch and dinner. Nothing added, just frozen fruit. Half the fruit I froze myself and the others, I bought at Costco. It really is a simple and quick dessert, the whole thing (without kids) could be made and cleaned up in about 15 minutes! All the kids loved it and they always love to help me in the kitchen so that was an added bonus!

Meat Balls – Recipe and video

Before last week, I had never made meatballs. Can you believe that? I don’t know why that surprises me but somehow it does. Meatballs. Hmmm. The kids and I had a fun time making meatballs for the first time, together.

Thanks so much Laura for the meatball recipe. They were tasty, and the kids really liked them. I think next I will add some other spices, like Italian to add just a little more flavor. Meatballs are great to have in the freezer, something quick to add to spaghetti to make it a much more exciting meal!
