Coconut Blended Coffee and Tips on Avoiding Pregnancy Heartburn

Okay, first things first. I’m 27 weeks pregnant and have been wanting to try out my theory that cold brew coffee wouldn’t give me heartburn like hot brewed coffee does. A couple days ago my wonderful husband brought me home a bag of Fidalgo Bay’s Cold Brew Blend, and I set it up to brew over night in my little toddy maker, and yesterday I tested my theory. And guess what? I was right!! Cold brewed coffee has a much lower acidity level than hot brewed coffee, and for those of us who struggle with heartburn, it’s a much better option. One of the greatest struggles of motherhood, and fatherhood for that matter, can be getting your kids to eat something other than pasta, cheerios, and cookies :) I say it with a smile but any parent who’s been a parent for very long probably knows that sometimes there aren’t very many smiles at the dinner table when mommy decides to make something a little more healthy than normal. Like fixing green beans for a side dish.

Green Tomatoes – Help!!

Aren’t these beautiful?! I got them from my sweet neighbor who didn’t want them to go to the slugs so he picked them. His tomato vines were too heavy so they were dragging on the ground the slugs were gettin’ em! But I have no idea what to do with them, anyone have a tip they’d like to pass along? :) Thanks!

Contrary to what previous studies have shown, coconut oil is actually very good for you! I often start my day with a tablespoon of coconut oil, no I don’t just eat it by itself! I melt it and put it in a smoothie or put it in my oatmeal sometimes, but my favorite way to get my coconut oil is cooked with eggs and vegetables. There are so many health benefits of coconut oil; weight loss, lowering chances of heart disease, it aides in digestion, contains anti-fungal properties, to name just a few. Today after church we went to Chris’ parents house for lunch and a time of visiting with family. The above picture is what I saw in her window sill. I didn’t really pay attention to what it was until sometime after dinner. Then it hit me, “that’s cilantro and I bet she’s keeping it fresh, not using it as a flowerless flower arrangement!” I’ve never seen this before, and yet it makes perfect sense! My mother-in-law, Joan, explained to me that when she gets cilantro or other cut herbs home from the store, she cuts off the ends, puts them in a glass of water and puts the glass in the fridge! What a no-brainer! So I thought I would share this great tip with you too! I’m always looking for easy ways to preserve food.

Food Tip – Cilantro

Hey, I just read this great and yet somehow almost no-brainer tip. Have you ever bought a bunch of fresh cilantro, only to let half of those delicious herbs go the way of the garbage heap? I have, sadly I admit, many times. My blogging friend tipped me off this week and I’m forever grateful. Although, my chickens will miss those precious rotting herbs in their daily diet.

Freeze it. It’s that simple, use it later in soup or another recipe (probably not that great in a fresh salad). Thanks for the tip!! She also has some other random cooking/homemaking tips in her post. Great entry, thanks.

Eating sustainably on a budget

I had to share this post I read about ways to eat local and still save money.

Though many farmer’s markets now take food stamps, that’s hardly the point: just pricing a pound of sustainably-farmed ground buffalo meat (the best substitute for ground beef at my farmer’s market last weekend), and you’ll know why you don’t see families of seven stocking their freezer. (It’s nearly $9 a pound, if you’re wondering.)

So, you ask, what’s the secret? How can I avoid CAFO beef and chicken and still feed my family on a limited budget? Eating with the seasons is nice, and all, but that box of McNuggets is priced right. And what better breakfast on the go than a nice Pop-Tart?
