This recipe is one that I have adapted from the many different recipes that I’ve tried over the past few years. It works for our family. Chicken And Pasta Salad With Feta Cheese for Summers

Chicken And Pasta Salad With Feta Cheese for Summers

1/2 lb penne pasta
1/4 cup olive oil
2 tablespoons white wine vinegar
1/2 teaspoon garlic, minced
2 tablespoons basil, chopped
2 medium tomatoes, diced
1/2 cup feta cheese, crumbled
1/2 cup black olives, pitted
8 cups spinach, rinsed and stemmed
1 1/2 lbs boneless chicken breasts, grilled and diced

1. Cook and drain the pasta, Set aside.
2. Whisk together the oil, vinegar, garlic and basil.
3. Toss with the pasta.
4. Add the tomatoes, feta and olives.
5. Chill for 1 hour.
6. Arrange the spinach on 4 plates.
7. Top with the pasta salad.
8. Add the chicken.
9. Garnish with more feta and sliced red onions (optional).

4 servings
1 hour 30 minutes 15 mins prep (includes 60 minute to chill).

Herb Marinade for Grilled Steak

Herb Marinade for Grilled Steak
Steaks are best when marinated at least 1 hour.

Makes about 1/3 cup

4 Tablespoons Olive oil
3 Tablespoons Worcestershire sauce
2 teaspoons Garlic minced
1 teaspoon Rosemary
1 teaspoon Thyme

Capt. Bob’s Baked Salmon Simple

Capt. Bob’s Baked Salmon Simple
1 salmon fillet
4 strips of bacon
1/2 cup chopped green onion
1 cup mushrooms
paprika
grated parmesan cheese
preheat oven to 350
place salmon fillet on greased cookie sheet (or on parchment paper). cook bacon crisp, chop and set aside. In same pan (in bacon grease) cook veggies until soft. Spread veggies evenly over fillet. Bake at 350 for approx. 20-25 min. Fish will flake when done. Remove form oven. Top w/ crumbled bacon, sprinkle w/ paprika and cheese and return to oven until cheese is browned.
Because I don’t like mushrooms I used red peppers instead. It made it on our “have again” list.

Caribbean Chicken

* 1 pound skinned and boned chicken breasts, cut into bite size pieces
* 2 cups pineapple tidbits, drained, reserve ? cup pineapple juice
* 1 cup chopped green pepper
* 1 cup water
* 1 tablespoon cornstarch
* 2 tablespoons cider vinegar
* 2 tablespoons brown sugar
* 1/8 teaspoon dried garlic powder
* 1/8 teaspoon dried ginger
* 1 medium diced banana
* 1/4 cup slivered almonds
* 1 cup uncooked brown rice

1. In a large sauce pan cook rice according to package directions.

2. In a large skillet sprayed with vegetable cooking spray, saut? chicken for 5 minutes until tender. Stir in pineapple and green pepper.

3. In a small bowl combine the 1/4 cup reserved pineapple juice, water, cornstarch, vinegar, brown sugar, garlic, and ginger. Stir well.

4. Pour mixture into chicken mixture. Mix well to combine. Continue cooking for 5 minutes or until mixture thickens, stirring often.

5. Fold in banana and almonds. Heat through.

6. Prepare brown rice according to package directions.

7. Serve over cooked brown rice.

Makes 6 servings (approx 4 oz chicken with 1/3 cup cooked rice)

Itallian Vegetable Kabobs

Itallian Vegetable Kabobs

1-3/4 cups Wish-Bone � Italian Dressing or Wish-Bone � Olive Oil Vinaigrette
Dressing
1/4 cup chopped fresh basil leaves
2 Tbsp. chopped parsley
2 Tbsp. lemon juice
2 tsp. grated lemon peel
1 lb. boneless, skinless chicken breasts, cut into
1-inch cubes
4 cups your favorite vegetables, cut into 1-inch
pieces (red bell pepper, onion, zucchini, eggplant,
yellow squash and mushrooms)
6 cups assorted greens

1. For marinade, in medium bowl, combine Wish-Bone ® Italian Dressing, basil, parsley, lemon juice and lemon peel; set aside.

2. On 4 skewers, alternately thread chicken and vegetables; place in large, shallow  on-aluminum baking dish or plastic bag. Pour 1-1/4 cups prepared marinade over kabobs; refrigerate remaining marinade. Cover, or close bag, and marinate in refrigerator, turning skewers occasionally, about 1 hour.

3. Remove kabobs from marinade, discarding marinade. Grill or broil kabobs, turning and basting with 1/4 cup refrigerated marinade, 15 minutes or until vegetables are tender and chicken is thoroughly cooked.

4. To serve, toss remaining refrigerated marinade with greens, then top with kabobs.

Also terrific with Wish-Bone ® Olive Oil Vinaigrette Dressing.

Serves – 4, Prep time – 15 minutes, Marinate time – 1 hour, Cook time – 15 minutes

Turkey Burgers – Karen

Turkey Burgers

This is a simple and delicious recipe. These are really good – any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves. Prep Time: approx. 15 Minutes. CookTime: approx. 15 Minutes. Ready in: approx. 30 Minutes.
Makes 12 burgers (12 servings).

3 pounds ground turkey1/4 cup seasoned bread crumbs1/4 cup finely diced onion2 egg whites, lightly beaten 1/4 cup chopped fresh parsley1 clove garlic, peeled and minced1 teaspoon salt1/4 teaspoon ground black pepper

Directions
1. In a large bowl, mix ground turkey, seasoned bread
crumbs, onion, egg whites, parsley, garlic, salt, and pepper.
Form into 12 patties.

2. Cook the patties in a medium skillet over medium heat,
turning once, to an internal temperature of 180 degrees F (85
degrees C).

Chicken Parmesean – Sabrina

Chicken Parmesean. Take chicken breast and dip it in raw egg, then dip it into bread crumbs (you can mix some italian seasonings into this if you wish). Then cook in the frying pan on Med – Med/High until cooked all the way through. Slap some mozzerella cheese on top and sprinkle with some parmesean (either fresh or out the the store bought kind). Lay your chicken over a bed of angel hair pasta and cover with marinara sauce. Your friends will be impressed!

Oh Jenni! You’re so sweet! The best steaks to buy are the ones that are “reduced for quick sale”! Hee-hee! No kidding! Sometimes they knock off a dollar or two and they’re “aged to perfection”. I do like rib eye and sirloin and new york. I always season before I cook, and both sides. Med. to high heat to sear in the juices..(again..this is really hit and miss because when it turns out reallly good…I’m surprised! Here’s a good way to get them done & not too done….
