Okay, first of all I have to say, aren’t these just the cutest ever?! Look at those two tiny fried quail eggs on top of my small little stack of pancakes :) Quail eggs are so fun!

This week I’ve been experimenting with a pancake recipe that works for us, and I think I’ve finally got it right! :) The first time I made these I made them with frozen blueberries (that were really big), and the kids didn’t really like the blueberries in the pancakes. I know, what’s wrong with them?! But they love the frozen blueberries on the side, or simmered down into syrup, so I guess I can’t complain! Anyway, I wouldn’t use the frozen blueberries from Costco in this recipe, they are just too big, and make it really hard to flip, use fresh berries or smaller frozen ones. Continue reading

Paleo, Pregnancy, and Heartburn

I was just realizing the other day that normally by this time in my pregnancy (I’m 23 weeks pregnant), I usually start to have heartburn. I normally turn in that good old 1st trimester “morning sickness” that lasts all day, for gradually increasing heartburn. The heartburn like I said is gradual, I will get heartburn in the evenings, and then the closer I get to D-Day, the more of the day this heartburn takes up. Here I am today, at 23 weeks pregnant. I don’t really look very “pregnant” in this picture, I think I carry my babies all spread out because in some clothes I don’t look pregnant until later. To me I just look a little overweight, but oh well, it’s how God made my body :)

Slow Cooker Italian Meatballs

I Love meatballs, and I love my slow cooker so these were a win-win! I’ve never been a huge fan of cooked spinach so if you aren’t either I would maybe sub out the spinach for cabbage or some other vegetable that holds up well in the slow cooker. My kids weren’t too fond of the spinach either, but I think the cabbage will be a little more appealing to their little eyes ;) The taste of the meatball was great though and went nicely with the cabbage slaw I made for a side dish! Fried Quail Eggs

Aren’t they just the cutest little fried eggs?! We have a few quail that are good little layers, their eggs are pretty small. It takes about 3 eggs to make up the size of a chicken egg. I’ll save up my quail eggs for a few days and give the kids a quail egg feast for breakfast, they each eat about 5 fried quail eggs(30 eggs) if I have that many :)

Quail eggs fry up pretty much the same as chicken eggs, but their shells are very different. The membrane beneath the shell is really tough so you can’t crack the eggs like you can a chicken egg, you either puncture with a sharp scissor and cut a slit to open or use a very sharp knife and hack the end off. This is my preferred method but it takes a little practice. We love our little quail they are sweet little birds and provide a supplemental food source to our family! It’s especially nice in the winter when my chicken’s aren’t laying as well. Thanks girls!

Carne Asada

It’s late January and my kids decided today that they wanted to watch a Christmas movie?! So what better recipe to post than what we had for dinner over the holidays, to be honest I don’t remember which one it was, Christmas or New Years? They were kind of a blur. Anyway, the meat in this recipe turned out amazing!! We had them with tortillas, but they could easily be a Paleo friendly meal; just use romaine lettuce for a wrap, or blanch a cabbage leaf, or you can add lettuce or cabbage and make a Carne Asada salad. Grain Free Chocolate Banana Bread

I love banana bread. Of course it’s tough making “bread” without wheat or some other kind of flour, but this recipe will satisfy that desire for a yummy sweet bread, just without the “bread” and a bunch of sugar! Next time I make this I’m going to make a couple changes, I’m going to add some chopped nuts, and I’m going to leave the chocolate chips whole instead of melting them on top (but both are optional). One thing that is hard about making big changes in your diet is eliminating some or many of the things you’ve grown to love. One of those loves in my life have been sugar, namely chocolate. I love desserts, I love to read about them, see pictures of them, and even more, I love to plan and bake and yes, I love to EAT them. So that has been a bit of a downer about taking on the paleo lifestyle. Sugar is a bit of a no-no. Part of me has felt a little deflated, until this past week when I discovered a paleo recipe blog called Health-Bent. A husband and wife team who love cooking, and she was formerly a pastry chef, yeah! They’ve got a ton of great recipes, and what I was even more excited about, they’ve got quite a few delicious paleo friendly real dessert recipes! I’ve already tried two of their recipes and I’m impressed, even the kids loved them, although maybe that’s not such a good thing? ;) Here we go… Continue reading

Grain-Free, Egg Pancakes

I don’t think I’ve ever been quite as excited about a new recipe as I am about this one. I am smiling inside and I can’t wait to share this one with my friends. I don’t know about you but I’ve started our family out with lots of things I’m trying to “un-do” like, lots of bread, toast, sugar, processed Mac ‘n’ Cheese, and the list goes on. And guess what, my kids like all those things. The hardest part about this journey of becoming more healthy has been finding recipes that my kids get excited about, and that is why I LOVE this recipe!

Grain Free Egg Pancakes

Every time I have made pancakes, my kids love them, they are homemade and tasty, full of butter and pure maple syrup, but eventually these ingredients will catch up with my kids. I really desire to help my kids form good habits, healthy habits. So that it’s not so hard to eat healthy when they are adults living on their own. I’m not talking about completely removing all forms of grain, carbs, sweets, and processed foods from their diet. But I want them to be the exception and not daily consumption. Continue reading
