Chocolate Covered Nut Cracker – Grain Free

Okay, maybe I’m pregnant and craving chocolate more than usual? But it seems like all the creative stuff I’ve been doing lately, or at least wanting to post about have been  healthy treats that I’ve been making. This one is great with or without the chocolate on top. And it makes up really fairly quickly; under 30 minutes. We ate it while the chocolate on top was still warm and gooey! And I have to add, that the kids have loved every one of the healthy desserts I’ve made for our family. Yesterday nana Joan made banana muffins and Cait said after we finished praying before bedtime, “I loved the ‘cupcakes’ nana Joan made us, they were really good.” :) They were really good! Breakfast Cookies

Breakfast Cookies
A few weeks ago I rummaged around online looking for a Breakfast Cookie recipe. I usually add a link to where I found the original recipe that I end up tweaking but the one I found was hard to understand so I’m not going to leave a link :)

The past few months I’ve been trying out (here and there) a diabetic diet. Trying my best to not gain too much weight during this pregnancy. In an effort to be more successful at this diet I wanted to have a few healthy quick snacks that I can grab between diaper changes and preparing meals for my ever-growing children! I’ve heard many doctors and other smart people say that it’s best to eat 5-6 small meals a day instead of 3 larger ones. But that can be a challenge for a mom with six kids (one still inutero!)

I chose this recipe because it didn’t call for sugar, just a bit of dark chocolate, and what I’ve read (from some more of those smart people) is that a bit of good organic dark chocolate, low in sugar, is great for our bodies! So, by all means, throw in a handful of chocolate and enjoy it! God made the cocoa fruit and we should enjoy it from time to time!

So I’ve decided, while I will dabble in this diabetic diet here and there (I’m not a diabetic by the way but my midwife thought it was a good healthy way to eat while expecting), I’m also going to strive to live a balanced life and not worry too much about how fast I lose the “baby weight.” And if my kids want me to make them a chocolate cake for their birthday, then you bet, let’s have some cake!! :) Okay, back to this healthy breakfast cookie recipe. I thought they turned out pretty good for how healthy they are, and a filling snack for a mom on the go, I hope you enjoy tweaking this recipe to your liking as well! Add some currants, or pumpkin or sunflower seeds, or cranberries. Have fun with it!

Oatmeal Coconut Pecan Squares with Chocolate Chips

Oatmeal Coconut Peacan Squares

I have a confession to make. Tonight I went to Starbucks to work on some blogging (which is not a good idea considering I was really distracted by all the conversations going on around me, I got to know these two people sitting next to me, way more than I wanted to!) My Confession: I did order a drink, but I brought my own dessert to eat with my coffee, I wrapped it in a napkin and put it in my purse :) I had been wanting to try this recipe from everybody likes sandwiches all week.  The only thing that I changed about her recipe was that I doubled it and used a 9×13 inch pan instead of the 8×8. And wow, what a delicious dessert bar! The flavor was amazing and the smell in the kitchen was very inviting, it finished cooking  before dinner which made it hard to want to eat dinner first. I’m glad I tried this recipe, thanks!

Raspberry Scones

I think I’ve mentioned before that scones are one of my weaknesses in life? Well, they are! I was pleased with this recipe, and although the picture doesn’t show, the first time I added currents and I liked them much better. They turned out just moist enough :) I got lots of compliments on this recipe, thanks cdkitchen!

Blackberry Cobbler

My kids are not huge fans of fruit desserts, pies and such. So I thought I would try this cobbler recipe from my “Best of Country Pies” recipe book that I got from my mom a few years ago. The kids loved this dessert! It was pretty cakey and less juicy/fruity :)  So if you are looking for a cobbler recipe that is chalk full of fruit this would not be the one you are looking for, although the cake part is so good, you can always double the fruit part and put a bunch on the bottom, it would be delicious either way!

Frozen Fruit Sorbet-Homemade

This ice cream or sorbet was perfect! The kids had a blast making it with our new juicer and it was so fast and easy. The best part about it is that it’s so healthy, you could eat it for breakfast lunch and dinner. Nothing added, just frozen fruit. Half the fruit I froze myself and the others, I bought at Costco. It really is a simple and quick dessert, the whole thing (without kids) could be made and cleaned up in about 15 minutes! All the kids loved it and they always love to help me in the kitchen so that was an added bonus!

Tonight I was really craving something sweet. I may have broken down and drug the family to Cold Stone Creamery if we had had any extra cash. But we didn’t, so I had to be creative. So what is the first thing that draws the creativity out of me when I am pregnant and tired? Chocolate. These brownies were really amazing. I have never made homemade brownies before, and now I’m pretty sure that I will never again buy a mix (okay, don’t say “never” Jenni!) I adjusted this recipe a bit, that I found from Allrecipes, they turned out wonderfully!

Chocolate and Peanutbutter – a Service of Love

Chocolate Peanutbutter Cheesecake
My dear friend Rene made me a Chocolate Peanut Butter Cheesecake for my birthday. I must add that she is 13 weeks pregnant and really sick (and she can’t eat peanut butter while she pregnant because it makes her sick!). Thank you Rene, it was a beautiful cheesecake and tasted so good! A few of my lady friends met me at a Starbucks in Marysville to have coffee for my birthday, it was so nice visiting with them. I have some really great friends, God has blessed me :) Thanks ladies, and thanks again Rene for the sweet cheesecake, I know that it was a sacrifice for you to make it. Bless you!

“Cars” Birthday Cake

This past March, my son, Aidan turned four. I love birthdays. I love the planning, and making the day special. One of my favorite parts of the planning is figuring out what kind of birthday cake I am going to make for the birthday kid. But, I was 9 months pregnant with our fourth child, and knew I could actually deliver any day so I better be creative, and plan to stay off my feet as much as possible!
