Almond Flour Banana Pancakes – Paleo

Almond Flour Banana Pancakes - Paleo
Okay, first of all I have to say, aren’t these just the cutest ever?! Look at those two tiny fried quail eggs on top of my small little stack of pancakes :) Quail eggs are so fun!

This week I’ve been experimenting with a pancake recipe that works for us, and I think I’ve finally got it right! :) The first time I made these I made them with frozen blueberries (that were really big), and the kids didn’t really like the blueberries in the pancakes. I know, what’s wrong with them?! But they love the frozen blueberries on the side, or simmered down into syrup, so I guess I can’t complain! Anyway, I wouldn’t use the frozen blueberries from Costco in this recipe, they are just too big, and make it really hard to flip, use fresh berries or smaller frozen ones. Continue reading

How do I get my kids to eat healthy foods? Tips from mommy…

Chicken Spaghetti Squash

One of the greatest struggles of motherhood, and fatherhood for that matter, can be getting your kids to eat something other than pasta, cheerios, and cookies :) I say it with a smile but any parent who’s been a parent for very long probably knows that sometimes there aren’t very many smiles at the dinner table when mommy decides to make something a little more healthy than normal. Like fixing green beans for a side dish.

So from our table to yours, here are just a few things I’ve found to work (in some cases) around our toddler, and not so toddler table. Continue reading

Garden Planning, it’s that time of the year again!

It’s almost February, do you know what that means? For those of us who have a garden, and for those of us who want one, it’s time. Time to start planning, reading, designing, even starting some seeds indoors if you are going to be doing that this year! I thought I would share with you a couple of the books that I’ve gleaned a lot of inspiration from. Gardening is not something that comes naturally to everyone, and some of us (even those of us who’ve spent a lot of time gardening when we were growing up) can use some extra help from people who have been successful.

I love gardening books, if you are wanting to start small this year with a couple of raised beds I would really suggest the book, “All New Square Foot Gardening”, it was the inspiration of my square foot gardens a few years back, it was simple and easy to flip through and gain some knowledge about how to get started. Very easy read!

This next book is great too, “Carrots Love Tomatoes” is a book about what plants like to be planted together, and which to keep apart from each other, it also give a little info on each of the plants mentioned and is a helpful resource for the gardener.

And for the more advanced gardener, or the family who is wanting to turn their whole yard and maybe even their house into a living breathing garden that feeds you and the rest of the neighborhood the whole year through, this next book is for you! “Gaia’s Garden” is a great resource for the gardener who wants to turn their yard into a food forest that eventually will take care of itself, this is our long term goal and I’ve learned so much from this book. It’s inspirational and somehow takes the fright out of tackling such a huge project! One step at a time.

Three great resources, I hope this helps you in your endeavors to growing some food for your family this coming year! Life is full of many changing seasons. I’m hoping to revamp my garden this year. We had to kind of tear up our garden to get my mom’s house moved in so I’m not sure what will happen with our garden this year, we are also having a baby in June so I may have to push my garden out another year, but it’s always in the back of my mind, I look forward to the day when I’m providing a good amount of food for our family from our garden, but like everything that is worth while, it takes time and effort! Happy Gardening!

Square Foot Gardening

This isn’t the best picture nor did my garden do the best that year :) But you can see, some of the sections are planted and some aren’t, because I was spacing things out, I had planted some rows of carrots (the kids eat a lot of carrots) and was waiting a couple weeks to plant some more :) Also, something I’m going to change when we do an overhaul on our garden plans; I made really wide spaces (I think about 5-6 ft) between garden boxes, so that I could mow between the boxes with our riding lawn mower. Next time I will make the boxes a lot closer together and just use the weed eater or plant a low lying ground cover between the rows. As soon as I can get the other photo to upload I will show you what I mean. :) The wide spaces seem like wasted space to me, and mowing with a rider between the rows actually just spreads weed seeds (I guess so would the weed eater). Ground cloth over the pathways, or planting a ground cover would be a better plan. Hope that helps! And we have chickens, a fence around the whole garden will be nice too!

Grain-Free, Egg Pancakes

I don’t think I’ve ever been quite as excited about a new recipe as I am about this one. I am smiling inside and I can’t wait to share this one with my friends. I don’t know about you but I’ve started our family out with lots of things I’m trying to “un-do” like, lots of bread, toast, sugar, processed Mac ‘n’ Cheese, and the list goes on. And guess what, my kids like all those things. The hardest part about this journey of becoming more healthy has been finding recipes that my kids get excited about, and that is why I LOVE this recipe!

Grain Free Egg Pancakes

Every time I have made pancakes, my kids love them, they are homemade and tasty, full of butter and pure maple syrup, but eventually these ingredients will catch up with my kids. I really desire to help my kids form good habits, healthy habits. So that it’s not so hard to eat healthy when they are adults living on their own. I’m not talking about completely removing all forms of grain, carbs, sweets, and processed foods from their diet. But I want them to be the exception and not daily consumption. Continue reading

Baked Sweet Potato Fries

P1380177

So, most of my kids prefer plain old “potato fries”. Actually, if you gave them the choice, I’m almost positive they would pass right by mama’s homemade fries for the enemy fries, greasy McDonald. Isn’t that just wrong? Anyway, today while the kids were watching me slave away chopping all of the sweet potatoes meticulously by hand, Eamon pointed out, “that must be hard!” Then someone asked, I think it was Guenna, “are you ever going to make REAL fries mommy?” Hmmm, I’ll have to think about that. Probably not ;) But you never know, I just might if you ask me really nice.

In the meantime, lets work up an appetite for these tasty little homemade, “not quite real fries”, shall we? Okay, we are all a work process, including me. Even though some of the kids are still getting used to the idea of sweet potatoes over regular potatoes, there weren’t really any of these tasty buggers left when dinner was cleared off the table, so not so bad after all! I’m still working on tweaking the recipe to tantalize their taste buds, I got the inspiration from my Everyday Paleo book, you should buy it if you’re a mom and you’re interested in the Paleo Diet! Kombucha

A week into our first batch of kombucha which is basically fermented tea. Once it’s done fermenting you take the mushroom off the top and put it in another container with some of the tea, and put the fermented tea in the fridge. kombucha is a very good for your digestive system and is a great way to get some of those healthy probiotics. I’m excited to try it. We used Mango black tea but you can use any kind of tea, and there are tons of recipes out there, you just have to find someone with a “mother” so you can start your own. It’s very expensive to buy in the store, and I’m sure they legally have to kill most of the good bacteria before they sell it to you so it seems a little pointless to buy it from the store ;)

Here’s a picture of our kombucha after about six days fermenting. Very exciting, should be ready in a few more days. I’m definitely not an expert yet so I’ll not be posting detailed instructions until I have a little more experience under my belt :)

Random- oatmeal, green tomatoes, and kombucha

Healthy Egg and Vegetable Breakfast

Healthy Breakfast

Contrary to what previous studies have shown, coconut oil is actually very good for you! I often start my day with a tablespoon of coconut oil, no I don’t just eat it by itself! I melt it and put it in a smoothie or put it in my oatmeal sometimes, but my favorite way to get my coconut oil is cooked with eggs and vegetables. There are so many health benefits of coconut oil; weight loss, lowering chances of heart disease, it aides in digestion, contains anti-fungal properties, to name just a few. I found a great article on the benefits of coconut oil on Organic Facts. I created a simple recipe here for a really healthy breakfast. Hope you enjoy it!

Home grown beets

Our first beets of the season

A couple nights ago we got to enjoy the first beets from our garden. Aren’t they beautiful?! This is the first time I’ve planted a real garden (something other than just potted plants), and so far I’ve been very pleased with the results. Even though we got a late start because of the weather, the garden is doing really well and we are starting to reap the harvest. More than anything, it’s been really fun having a garden for the kids, they have learned so much and have had lots of fun planting seeds, helping weed, and helping water the plants, and now helping harvest the plants. Well worth all the efforts!

Guenna's beetsBeet boy

I steamed the beets and then chopped them up (I wore gloves because the beets were so hot), then added butter, salt and pepper and they were delicious! I steamed them so much of the color leached out of the beets, but they still had lots of flavor. I’m anxious to try them again a different way. Probably more next week, I need to let the remaining beets grow some more.

Any suggestions on cooking beets? I know my mom’s should both have at least one or two. I can’t really do beet salad, can’t do the vinegar, so I have to stick to mild recipes.  Specifically, how do you keep the beets from losing their color when you cook them? I steamed them in a veggie steamer, but I’m thinking that much of the color drained into the pot below? Maybe they aren’t ripe yet? Do they get more color the longer they stay in the ground? Anybody know anything about beets? :) As you can see, I’m still a learning gardener!

Frozen Fruit Sorbet-Homemade

Homemade frozen fuit icecream

This ice cream or sorbet was perfect! The kids had a blast making it with our new juicer and it was so fast and easy. The best part about it is that it’s so healthy, you could eat it for breakfast lunch and dinner. Nothing added, just frozen fruit. Half the fruit I froze myself and the others, I bought at Costco. It really is a simple and quick dessert, the whole thing (without kids) could be made and cleaned up in about 15 minutes! All the kids loved it and they always love to help me in the kitchen so that was an added bonus!

Making Frozen Fruit Icecream-Juicer

Organic Baby Food – Where do I start?

When do I start to give my baby solids? What kind of food do I feed him first? How much do I give him? How do I know when he’s done? Are store bought foods safe or healthy for my baby? Is it realistic to make my own? When is he ready for finger foods? I remember so many of these questions running through my mind as a first time mom, everything is new and I want to do it right. In this post I will go through a few of things that I have learned about feeding babies their first solids.
