Grain Free Brownies

One thing that is hard about making big changes in your diet is eliminating some or many of the things you’ve grown to love. One of those loves in my life have been sugar, namely chocolate. I love desserts, I love to read about them, see pictures of them, and even more, I love to plan and bake and yes, I love to EAT them. So that has been a bit of a downer about taking on the paleo lifestyle. Sugar is a bit of a no-no. Part of me has felt a little deflated, until this past week when I discovered a paleo recipe blog called Health-Bent. A husband and wife team who love cooking, and she was formerly a pastry chef, yeah! They’ve got a ton of great recipes, and what I was even more excited about, they’ve got quite a few delicious paleo friendly real dessert recipes! I’ve already tried two of their recipes and I’m impressed, even the kids loved them, although maybe that’s not such a good thing? ;) Here we go… Continue reading

Normally when I’m making birthday cakes I use the boxed cake mixes but I love dense, rich, moist, cakes and this recipe from Allrecipes hit the spot! I’m guessing that to make a yellow cake you could just omit the cocoa powder, but I haven’t tried it so don’t quote me on that! I was perfectly pleased with how this cake turned out. And topped with Grandma Esther’s Chocolate Truffle Frosting, this cake turned out to be quite divine! Grandma Esther’s Chocolate Truffle Frosting

Grandma Esther's Chocolate Truffle Frosting

I can’t believe I’ve never posted this recipe! This is a traditional birthday cake frosting in the Burns household, made by my husband’s maternal grandmother, Grandma Esther. She would always make the birthday kid a big chocolate cake with truffle frosting, and then give the birthday kid the leftover frosting in a container, they could enjoy throughout the week. I’ve done my best to pick up where dear Grandma Esther left off, some years it turns out wonderful and some years I have not gotten it quite right. Chris requests this every year and I (loving chocolate) am always willing to comply! Hope you enjoy it as much as we have!

Grandma Esther’s Chocolate Truffle Frosting

3 cups powdered sugar

1 1/2 cups heavy cream

2 cups semi-sweet chocolate chips

1/3 cup cocoa powder

2 Tbsp butter

1 1/2 Tbsp vanilla

Directions:

1. Sift powdered sugar and cocoa into a medium sized bowl. Cream together sugar cocoa and cream, add vanilla.

2. Heat chocolate with 2 Tbsp butter in a double broiler. Bring water to boil on medium high heat, when it starts to boil turn the heat off and let the chocolate melt slowly. After the chocolate has completely melted, blend into the cream and sugar mixture.

3. Spread over cake or cupcakes, refrigerate remaining frosting, after it hardens it can be used to make truffles; roll in cocoa powder, powdered sugar, chopped nuts, etc. Enjoy!!

Oatmeal Coconut Peacan Squares

I have a confession to make. Tonight I went to Starbucks to work on some blogging (which is not a good idea considering I was really distracted by all the conversations going on around me, I got to know these two people sitting next to me, way more than I wanted to!) My Confession: I did order a drink, but I brought my own dessert to eat with my coffee, I wrapped it in a napkin and put it in my purse :) I had been wanting to try this recipe from everybody likes sandwiches all week.  The only thing that I changed about her recipe was that I doubled it and used a 9×13 inch pan instead of the 8×8. And wow, what a delicious dessert bar! The flavor was amazing and the smell in the kitchen was very inviting, it finished cooking  before dinner which made it hard to want to eat dinner first. I’m glad I tried this recipe, thanks!
