Almond Flour Banana Pancakes – Paleo

Almond Flour Banana Pancakes - Paleo
Okay, first of all I have to say, aren’t these just the cutest ever?! Look at those two tiny fried quail eggs on top of my small little stack of pancakes :) Quail eggs are so fun!

This week I’ve been experimenting with a pancake recipe that works for us, and I think I’ve finally got it right! :) The first time I made these I made them with frozen blueberries (that were really big), and the kids didn’t really like the blueberries in the pancakes. I know, what’s wrong with them?! But they love the frozen blueberries on the side, or simmered down into syrup, so I guess I can’t complain! Anyway, I wouldn’t use the frozen blueberries from Costco in this recipe, they are just too big, and make it really hard to flip, use fresh berries or smaller frozen ones. Continue reading

Basil-Lime Baked Salmon

Lime Basil Baked Salmon

We try to eat fresh fish once a week, or at least some kind of seafood. As much as I love; olive oil, lemon, dill and salt and pepper, I’m always trying to think of other ways to bake my fish! This marinade has a really nice zippy, fresh flavor, no tartar sauce needed!! I think it’s one of my favorites so far! Continue reading

Blue, Brown, and Dark Brown Eggs

Farm Fresh Eggs
All of our chickens have finally started laying this year! Last spring I hatched a few different pure breeds of chickens. Black and Blue Copper Marans, Blue Ameraucanas, and Blue Laced Red Wyandottes, and I’m happy to say that they’ve all finally started laying eggs as of this week! The pretty blue ones are laid by the Ameraucanas, the dark browns are laid by the Blue and Black Copper Marans, and the light browns are laid by several different breeds that we have on our little farm. Lime Balsamic Vinaigrette Dressing

Lime Balsamic Vinaigrette Dressing

I know this isn’t the most amazing picture I’ve ever taken, but the recipe is healthy and it’s amazing homemade dressing! So simply easy to make, and so much cheaper than buying dressing! We go through dressing pretty fast around here, and this one even the kids love! Continue reading

Paleo, Pregnancy, and Heartburn

I was just realizing the other day that normally by this time in my pregnancy (I’m 23 weeks pregnant), I usually start to have heartburn. I normally turn in that good old 1st trimester “morning sickness” that lasts all day, for gradually increasing heartburn. The heartburn like I said is gradual, I will get heartburn in the evenings, and then the closer I get to D-Day, the more of the day this heartburn takes up. Here I am today, at 23 weeks pregnant. I don’t really look very “pregnant” in this picture, I think I carry my babies all spread out because in some clothes I don’t look pregnant until later. To me I just look a little overweight, but oh well, it’s how God made my body :)

Slow Cooker Italian(ish) Meatballs – Grain Free

Slow Cooker Italian Meatballs

I Love meatballs, and I love my slow cooker so these were a win-win! I’ve never been a huge fan of cooked spinach so if you aren’t either I would maybe sub out the spinach for cabbage or some other vegetable that holds up well in the slow cooker. My kids weren’t too fond of the spinach either, but I think the cabbage will be a little more appealing to their little eyes ;) The taste of the meatball was great though and went nicely with the cabbage slaw I made for a side dish! Hope you enjoy! Continue reading

Carne Asada

It’s late January and my kids decided today that they wanted to watch a Christmas movie?! So what better recipe to post than what we had for dinner over the holidays, to be honest I don’t remember which one it was, Christmas or New Years? They were kind of a blur. Anyway, the meat in this recipe turned out amazing!! We had them with tortillas, but they could easily be a Paleo friendly meal; just use romaine lettuce for a wrap, or blanch a cabbage leaf, or you can add lettuce or cabbage and make a Carne Asada salad. I will be making this recipe again! Continue reading

Grain Free Brownies

Grain Free Brownies

One thing that is hard about making big changes in your diet is eliminating some or many of the things you’ve grown to love. One of those loves in my life have been sugar, namely chocolate. I love desserts, I love to read about them, see pictures of them, and even more, I love to plan and bake and yes, I love to EAT them. So that has been a bit of a downer about taking on the paleo lifestyle. Sugar is a bit of a no-no. Part of me has felt a little deflated, until this past week when I discovered a paleo recipe blog called Health-Bent. A husband and wife team who love cooking, and she was formerly a pastry chef, yeah! They’ve got a ton of great recipes, and what I was even more excited about, they’ve got quite a few delicious paleo friendly real dessert recipes! I’ve already tried two of their recipes and I’m impressed, even the kids loved them, although maybe that’s not such a good thing? ;) Here we go… Continue reading

Sauteed Garlic Brussels Sprouts

P1380576

When I was a little girl I hated disliked brussel sprouts. (Okay, so did you know that they are not actually called “brussel sprouts” they are called “Brussels Sprouts.” After the city of Brussels in Belgium where they were discovered, I didn’t know that until today :) But as an adult I started making them myself, and I have found that I really like them now. My mom informed me last night that she always made them from frozen sprouts, maybe that is why I disliked them? Well, these Brussels Sprouts were delicious, and even most of the kids liked them! And that is always a plus when it comes to cooked vegetables! Delish!

Kids LOVE Meatloaf, at least mine do…now.

Paleo Meatloaf and Baked Sweet Potato Fries

Since Chris and I have started eating “Paleo about a month and a half ago, we have slowly brought the kids one board. For the most part their lunches are the same most days, but they don’t eat box cereal any more and they eat a lot more eggs/pancakes (I know, pancakes aren’t paleo, we’re getting there:). But because I don’t plan to make two meals for the kids/mom/Chris and I, we ALL eat paleo friendly meals for dinner. So for the most part we leave the bread/carbs off the dinner table. And the kids have been adjusting pretty well, there have been a few complaints, but they complained sometimes before so we’re not doing to bad. Continue reading
