It’s my birthday! I’m 35 today and you know, all I REALLY want is some Haagen Dazs Rocky Road ice cream? But I brought in my birthday in the ER with my hubby and baby Jack, the doctor thinks I have gall stones. Sooooo…I think it would be wise to hold off on the Rocky Road, and maybe stick to a healthier option like these paleo muffins for example (hint, hint!) All of our chickens have finally started laying this year! Last spring I hatched a few different pure breeds of chickens. Black and Blue Copper Marans, Blue Ameraucanas, and Blue Laced Red Wyandottes, and I’m happy to say that they’ve all finally started laying eggs as of this week! The pretty blue ones are laid by the Ameraucanas, the dark browns are laid by the Blue and Black Copper Marans, and the light browns are laid by several different breeds that we have on our little farm. Paleo, Pregnancy, and Heartburn

I was just realizing the other day that normally by this time in my pregnancy (I’m 23 weeks pregnant), I usually start to have heartburn. I normally turn in that good old 1st trimester “morning sickness” that lasts all day, for gradually increasing heartburn. The heartburn like I said is gradual, I will get heartburn in the evenings, and then the closer I get to D-Day, the more of the day this heartburn takes up. Here I am today, at 23 weeks pregnant. I don’t really look very “pregnant” in this picture, I think I carry my babies all spread out because in some clothes I don’t look pregnant until later. To me I just look a little overweight, but oh well, it’s how God made my body :)

Slow Cooker Italian Meatballs

I Love meatballs, and I love my slow cooker so these were a win-win! I’ve never been a huge fan of cooked spinach so if you aren’t either I would maybe sub out the spinach for cabbage or some other vegetable that holds up well in the slow cooker. My kids weren’t too fond of the spinach either, but I think the cabbage will be a little more appealing to their little eyes ;) The taste of the meatball was great though and went nicely with the cabbage slaw I made for a side dish! Grain Free Brownies

One thing that is hard about making big changes in your diet is eliminating some or many of the things you’ve grown to love. One of those loves in my life have been sugar, namely chocolate. I love desserts, I love to read about them, see pictures of them, and even more, I love to plan and bake and yes, I love to EAT them. So that has been a bit of a downer about taking on the paleo lifestyle. Sugar is a bit of a no-no. Part of me has felt a little deflated, until this past week when I discovered a paleo recipe blog called Health-Bent. A husband and wife team who love cooking, and she was formerly a pastry chef, yeah! They’ve got a ton of great recipes, and what I was even more excited about, they’ve got quite a few delicious paleo friendly real dessert recipes! I’ve already tried two of their recipes and I’m impressed, even the kids loved them, although maybe that’s not such a good thing? ;) Here we go… Continue reading

Almond Crusted Baked Cod

Our kids have not liked all the new “Paleo friendly” food we’ve been trying the past few weeks.  Like tonight for instance, we had acorn squash stuffed with sausage and lots of goodies, sounds delicious right?! Well, I will just say that one of the children mysteriously turned up sick before dinner, and a few of the children were complaining about hunger pangs before bedtime :) But Chris and I liked it!

Well, this Cod was NOT one of those :) They loved it, and were begging for more! It’s always a sigh of relief when the kids like dinner, and two of those kids who loved it, normally don’t like fish, so it was a win, win!
